Chunky ham, pasta and vegetable frittata

Amazing recipe! I got this one from the March Super Food Ideas magazine. I love to go through this mag every month and pick out some to try.  The family LOVED this one – also delicious cold!

Chunky ham, pasta and vegetable frittataBecause it used a few things I could buy already prepared, I found this to be a really quick and easy recipe to put together.  Great for lunchboxes, and delicious either hot or cold.  A keeper! Delicious!Equipment



STEP 1 … Preheat oven to 180C or 160C degrees fan-forced. Grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.

STEP 2 … Cook pasta in a large saucepan of boiling water, following packet directions, until tender. Drain well.

STEP 3 … Combine pasta, ham, corn, peas and onion in a bowl. Spoon mixture into prepared pan. Top with cherry tomato.

STEP 4 … Whisk eggs and cream in a bowl until combined. Stir in cheese. Season with salt and pepper. Pour over pasta mixture.

Bake for 30 minutes or until set. Cool frittata in pan.

Cut into 12 squares. Serve.
